Fajitas are now ubiquitous among Tex-Mex restaurants across the Houston region, but there was a time when diners could only find them at Ninfa’s! That’s right: Mama Ninfa created delicious tacos al carbon (later becoming the bedrock of Tex-Mex cuisine known as fajitas) and the rest is history. (Her salsa verde or green sauce is legendary, too.) And what a history it is!
In 1973, Ninfa Laurenzo, a widow with five children, established Ninfa’s as a taco stand and side business to her tortilla factory, which was struggling financially. It would grow into a restaurant and then a chain of restaurants. Theatre Under the Stars even premiered the musical “NINFA!” back in 1982.
